Tropical Green Smoothie

One of the things that just feels like the beginning of summer is smoothies! Growing up, one of the things that I look back on fondly is after a long day of mowing the lawn, working in the garden and wrapping up with raking the lawn with my family is when my mom would make her famous Tropical Typhoon Smoothie while we all sat on the back porch with the dogs running in the yard. The smell of fresh cut grass and the sun beginning to set and a faint scent of cilantro from the fields next door bring back wonderful summer memories. Though the original Tropical Typhoon was a little more indulgent, this a delicious and healthier version of my childhood classic. 


So, how do you make a sweet smoothie healthier without impacting the flavor? Vegetables! A coconut and pineapple is a wonderful decadent combination but what if it also included vegetables? Adding spinach to a smoothie is a great way to increase your vitamin A, vitamin C, vitamin K, iron, folate and potassium without impacting the taste. Healthy doesn’t have to taste like it and this is a sweet, tropical and bright green treat. Enjoy this Tropical Green Smoothie after the gym, long day at work or finishing your yard work and kids love it! 


Ingredients:

1 med. Banana (fresh or frozen slices)

2 cups Baby spinach

3/4 cup Pineapple chunks, frozen, canned or fresh

1/2 cup Mango chunks, frozen

12 oz. Coconut milk

Whipped cream for garnish

1/4 cup water (optional)


Directions: 

  1. Place mango, coconut milk, pineapple, spinach and banana into a blender and blend until smooth.

  2. If the mixture is too thick or has difficulty blending add water or more coconut milk until consistency is at desired level.

  3. Pour into a glass, garnish with whipped cream and an umbrella (optional). Enjoy this Tropical Green Smoothie!
