Rise and shine with this Sweet Potato Breakfast Hash! 


🍠🍳🥑 Fuel your day with a burst of flavors and wholesome goodness. Anti-inflammatory food doesn't have to be boring and flavorless. This breakfast is easy to make and packed with vitamins and minerals as well as healthy fats and protein. Here's the recipe to kickstart your morning:



Sweet Potato Breakfast Hash with Sunny Side Up Eggs and Avocado 🍠🍳🥑


Ingredients:

2 medium-sized sweet potatoes, peeled

1 diced red bell pepper, chopped

1 yellow onion, diced

2 cloves garlic, minced

2 tbsp olive oil

Salt and pepper to taste

4 large eggs

1 ripe avocado, sliced

Fresh cilantro for garnish 


 Instructions: 

1️⃣ Preheat your oven to 400°F (200°C).


2️⃣ In a large oven-safe skillet, heat olive oil over medium heat. Add diced sweet potatoes and cook until they start to brown, stirring occasionally (about 8-10 minutes).


3️⃣ Add chopped bell pepper, diced onion, and minced garlic to the skillet. Season with salt and pepper. Cook until the veggies are tender and fragrant.


4️⃣ Create four wells in the hash for the eggs. Crack an egg into each well. Season the eggs with salt and pepper.


5️⃣ Transfer the skillet to the preheated oven and bake for about 8-10 minutes or until the egg whites are set but the yolks are still runny.


6️⃣ Remove from the oven, top with sliced avocado, and garnish with fresh cilantro.


7️⃣ Serve immediately and enjoy your colorful and nutritious breakfast hash! 🌞
