Sheet Pan Steak Fajitas with Homemade Guacamole

Who doesn't love tacos, especially steak fajita tacos with homemade guacamole but also who doesn't like to do dishes? This Sheet Pan Steak Fajitas with Homemade Guacamole recipe is for you! It only requires a couple bowls, knife, spoon and a sheet pan to make these steak fajitas. Let's get cooking.


For Sheet Pan Steak Fajitas:

  • 1 lb flank steak

  • 3 bell peppers, sliced

  • 1 onion, sliced 

  • 2 tablespoons olive oil

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

  • Juice of 1 lime

  • Tortillas, for serving


For Homemade Guacamole:

  • 2 ripe avocados

  • 1/4 cup red onion, finely diced

  • 1 jalapeño, seeded and finely diced (optional)

  • Juice of 1 lime

  • Salt and pepper to taste

  • 1 teaspoon garlic powder

  • 1/2 teaspoon ground cumin

  • 2 tablespoons chopped fresh cilantro


Instructions:

1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or aluminum foil for easy cleanup.

2. In a small bowl, mix the olive oil, chili powder, cumin, paprika, garlic powder, salt, pepper, and lime juice to create a marinade.

3. Place the sliced flank steak, bell peppers, and onion on the prepared sheet pan. Drizzle the marinade over the steak and vegetables, tossing to coat evenly.

4. Spread the steak and vegetables on the sheet pan in a single layer, ensuring they're not overcrowded. If necessary, use two sheet pans.

5. Roast in the preheated oven for 15-20 minutes, or until the steak is cooked to your desired doneness and the vegetables are tender and slightly charred.

6. While roasting the steak and vegetables, prepare the homemade guacamole. Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth or to your desired consistency.

7. Add the red onion, jalapeño (if using), lime juice, salt, pepper, cumin, and chopped cilantro to the mashed avocado. Stir until well combined.

8. Once the steak and vegetables are done, remove them from the oven and let them cool for a few minutes.

9. Warm the tortillas in the oven or on a skillet.

10. To serve, spoon the steak and vegetables onto the warmed tortillas and top with a dollop of homemade guacamole.
