Bonjour mes amis! Let's dig in to cette salade des pommes de terre française. A delicious French twist on potato salad that is also mayonnaise free and packed with bright, bold flavors. This is great for your next picnic or backyard barbecue as it is filled with fresh herbs and tangy mustard.
Ingredients
1.5 lbs of small potatoes (Dr. Kristina recommends small Yukon gold potatoes)
1 tablespoon salt
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon whole grain mustard (optional)
1 teaspoon salt
¼ - ½ teaspoon ground black pepper
4 tablespoon fresh dill, chopped
1 shallot, peeled and diced
5-6 cornichons or pickles or relish of your choice, diced
1 tablespoon cornichon or pickle juice (optional)
Directions
Slice potatoes in half or in quarters if they are larger then place them in a large pot with water covering them by 1 inch. Add tablespoon of salt and bring to boil over medium-high heat. Cook until the potatoes are easily pierced with a knife. Drain and rinse under cold water.
In a large bowl, combine olive oil, red wine vinegar, salt, pepper, Dijon mustard and grainy mustard and mix until emulsified and well combined. Then add freshly chopped dill, diced shallots, and diced cornichons, pickles or relish. Toss to combine.
This dish can be served both warm or cold. It is also excellent for leftovers.
