Avocado Toast with Poached Egg and Homemade Pickled Onions

Ingredients:

  • 1/2 cup water

  • 1 teaspoon salt

  • Pinch of black peppercorns (optional)


Instructions:

1. Make the Pickled Onions (Do This First):

  • In a small saucepan, combine the apple cider vinegar, water, sugar, salt, and black peppercorns. Bring to a simmer, stirring until the sugar and salt dissolve.

  • Remove from heat, and pour the mixture over your sliced red onions in a jar. Let it sit and cool at room temperature for at least 30 minutes. You can make this in advance and store it in the fridge for up to two weeks—perfect for adding flavor to more dishes!

2. Poach the Eggs:

  • Bring a pot of water to a simmer, and add a splash of vinegar (this helps the egg whites stay together).

  • Crack each egg into a small cup, then gently slide it into the simmering water. Cook for about 3-4 minutes until the whites are set, but the yolk is still runny. Remove with a slotted spoon and set aside.

3. Prepare the Avocado:
