This avocado, tomato, and two-bean salad is a summer must-have for any gathering. With just five main ingredients and a dash of salt and pepper, it can be ready in a snap, perfect for hot summer days. While this may not look like the prettiest salad, the flavors is amazing.
Ingredients:
2 cans of whole white beans, drained and rinsed
2 cans of whole black beans, drained and rinsed
2 large avocados, cubed
1 cup grape tomatoes, sliced in half
1-2 teaspoons ground cumin
Salt and pepper to taste
Directions:
Drain and rinse both cans of beans in a colander, shaking gently to remove excess water. Then, place the beans in a large bowl.
Cut your avocados into bite-size pieces and place them into the bowl with the beans.
Slice the grape tomatoes in half and place in the bowl with the beans and avocados.
Sprinkle 1-2 teaspoons of cumin over the bowl. Stir gently to evenly coat the beans and avocados.
Add salt and pepper to taste and stir to evenly coat.
Refrigerate for 1 hour before serving to allow flavors to meld. This recipe serves 6-8 people. Optional: Add a kick with fresh cilantro, jalapeno slices, or lime wedges.
